Yep, today I got the official diagnosis that I am a 'celiac.' This means that gluten causes an autoimmune reaction in my small intestines which causes the villi (little fingers that soak up the nutrients in your food) to flatten out.
It means no gluten.
Which sucks.
Also all my first and even second-degree relations are suppose to go get the blood test to see if they have it also.
Josh and I (we have had strong suspicions about this diagnosis, since the doctor who did my second endoscopy came in and 1) said so, 2) used the word 'advanced flattening' (which really, do you ever want to hear except in relation to your flattening stomach???). Anyway, we have been doing internet/cookbook research since last Tuesday and I started eating gluten-free-er (seriously, the stuff is in soy sauce! Gotta read those labels!!)
So it was not a huge suprise and I was able to ask good questions at my follow-up today and even met with a dietician! Then I visited the SLC library to scope for more gluten-free cooking books ("Since you already cook a lot, this will not be as hard as a transition," said dietician lady.)
Here is my current collection of gluten-free stuff to try/taste/work on:
Do NOT freak out! Here is my first gluten-free treat - No Bakes! The party is still on!
And here is my first 'real' dessert: strawberry cream cheese pie! You can come have a piece tomorrow, if there is any left.
Then I went to an AWESOME gluten-free store in Taylorsville (it is nice, because once you walk into a regular grocery store, all you see is stuff you can NOT eat. There, EVERYTHING was legal!!)
Seriously, TEN minutes after I left the store, a caseworker from DCSF called and wanted to know if we wanted placement of a 18 month old boy.
CRAZY!!
So I finally get off the road to: take notes, call blessed-Bugs (who transported, fed, cared for and keep alive, the girls ALL day long), call JOSH, call 14 different caseworkers, etc.
About 30 minutes later, I am headed to the Christmas Box House (the children's shelter of the area). Mikeal (still unsure about exact spelling) fell asleep after 3 fishy crackers and 3 minutes in the car. Then he slept/drooled on the couch for three more hours (which was perfect for organizing the entire day and cooking dinner!).
Josh gave him a bath after dinner with two EAGER helpers. Then we all played hide-n-seek and throw-the-ballon- and other fun fun games.
Now everyone is asleep (ok, everyone is in bed and it is quiet). No school tomorrow. Perfect timing for a complete at home day. I am off to go grocery shopping for the week right now.
Also, here are some pictures of Josh and I working on learning to French braid hair:
